Spanish Mahón from Minorca
Sep. 26th, 2004 01:52 pmIt is a slightly dry cheese though it still has a texture that is a bit softer than mild cheddar. It also crumbles very slightly when being cut. The flavor is mild with a nicely bitter flavor that comes out after a moment or two in the mouth. The aftertaste reminds me a bit of concord grapes and I wonder if perhaps the cheese is soaked in wine. I think perhaps, unlike cheddar, this is a cheese that needs to be eaten by itself rather than on top of a cracker or something which might hide the subtle undertones. Though certainly things like that could be eaten between bites.
