The store no longer carries golden syrup, so there was a terribly dangerous combination of sugar, water, and acid gently boiling upon the stove earlier today. Never spill hot sugar. It sticks and burns like a little demon trying to drag an elephant's soul into Hades. Fortunately the 492 g. of white sugar, 8 g of brown sugar, 240 ml of water, and 1/2 g of tartaric acid did not spill. (Though I have some painful memories of past incautious mistakes.) They were successfully heated to 250F and then cooled. The next time there should be 12 g of brown sugar, but other than that it worked out very well.

Beer was brewed with a minimum of mistakes. It should be ready by yuletide.

Then clean up and making dough for rolls again, because I clearly did not have enough to do today. The dough was still a sticky mess so it was not me screwing up the recipe last time. No, there is something I do not understand about it or else a mistake in the book. I shall either try adjusting or try something new next time. Though the dough is going to get baked. Waste not. I will get this bread/roll thing down. Then I can temp victims into my lair with fresh baked bread. "Come in and have a slice of fresh bread and a cup of tea, my dear." Muahahahahah.
