Today while I was out working I stopped for a moment and really looked at the mountains during my lunch hour. Thunderstorms were building over the mountains leaving the high peaks in cloud and shadow. A few high feathery clouds were beginning to reach out, but the foothills and all the city were still in bright sunlight under a sky that shaded from nearly white at its edge to navy blue at its zenith. It was a lovely summer scene. The plains and city swealtering in a dry heat while storms built over the mountains. Tonight it is raining heavily here off and on as hidden towers of cloud pass overhead.

For this evening's project I put about 475 ml by volume, or almost 650 ml packed into the measuring cup, of cut up peaches into a canning jar with 550 ml of vodka. I'm going to let them get to know each other for about three weeks and then we'll see. Perhaps I should buy more peaches and start another batch this weekend. Peach season won't be here long and if my calculations are correct then I should get about 750 ml of total liqueur out of this once the peaches are discarded and I bring up the volume a bit with simple syrup to sweeten it, if necessary.

It may take considerably longer than three weeks to really tell what you have. Beth and I have had several batches of liqueur that improved in flavor and smoothness for up to a year after the fruit was removed from the vodka. A little glycerin for body is also sometimes useful.

I'm not sure if I would put glycerin in a fruit vodka. Mostly I use it to give body to herbal or spice flavored mixes. I think between the fruit juice extracted in the prolonged maceration and some simple syrup, sugar, or honey fruit vodkas have enough body. Though you are quite right that in resting for a while the vodka will probably improve. I know that the Shishka (pine flower) got much more interesting with age.

I might also consider either some ginger or lemon as those go nicely in a peach pie.
