Dinner Last Night

Chips (meaning chunks of potato fried), hotwings, guacamole, and beer. Gosh that was a good dinner. Fun to make the chips as well. The hot wings were just in a bag ready cooked type, but it was still so good to have them all hot from the oven. Dipping them in cold blue cheese dressing. MMMMmm! And I finally watched The Lion, The Witch, and the Wardrobe. Okay movie, but the company was better.
Tonight it was pork 'country ribs', which are actually just slices of the pork shoulder. The rub made with two bay leaves, 1½ tsp. thyme, 1½ tsp. rosemary, 1 tsp. salt, and 1½ tsp. pepper, was good, though it lacked something. Perhaps it would be improved with the substitution of some smoked salt. We did them under the broiler and they came out fine, though a touch unevenly cooked. I think this cut is better for cutting up further into stir fry. The mushrooms and onion were cooked with a bit of cardamom, dash of soy sauce, butter, and some whiskey for dramatic deglazing. We watched The Family Stone which was tolerable. Better than Elf, but for me that isn't exactly setting the bar high.
