I want to be left alone, I need someone to talk to. I want to read, I want to watch, I want to sleep, I can't sleep. My nerves are on a knife-edge, that's about the only uncontradicted statement I could make about now. I don't feel very well today. I'm not sure what to do about it.

Perhaps if I simply chained myself to my desk with a pot of tea I could get something useful done despite these restless feelings. But I'm torn between feeling I should do something and not feeling like doing anything at all. I suspect that if I did write anything it would come out rather bad.

I made dinner for my grandma and myself. Nothing fancy, just simple pain fried chicken with sides of potato salad and stir-fry vegetables. I had been looking in a cookbook earlier for something to do with the chicken breasts that would be nice, but nothing jumped out at me as both appealing and easy to do.

I would like to relax with a beer now, but that's the surest sign I know of that I should not have one. Deeply annoying.

Relaxing with a beer or two can ease stress. Relaxing with ten beers may be inadvisable. My advice is if you can stop at one, have one.

I've no fear of not stopping at one or two, but I'm a careful fellow. I'd rather drink with someone than to drink alone when I'm feeling bad.

Back when I was cooking, my default for chicken breasts was to shake lemon pepper on them and bake them at 350F for 30 minutes (that's for one, probably longer for more) in the toaster oven. During that 30 minutes, I could make the starch and veggies.

My default for cooking is a very hot pan, some olive oil, maybe some butter, salt, and pepper. Not haute cusine, but not bad. It would have been ever so slightly better if I'd had buttermilk and flour to coat them.

I never knew "fried chicken" meant a pan on the stove and oil until we moved to Virginia Beach when I was 15. We didn't eat out often, and when I made "fried chicken," it was oven-fried. Pans with oil are definitely second thoughts for me, and that was before I became so clumsy.

I can see where that would happen, but I've never thought of chicken done in the oven as fried. Because frying happens with oil and is crispy and the best oven chicken never comes out like that. I do, however, love oven-baked chicken. Put it in teriyaki sauce (or some other soy and sugar based stuff) and bake. I love it for being tender, easy, and full of flavor.

Well, this fries in the chicken's own oil. You take your chicken pieces, dip them in skim milk, and shake them in a bag of partially-smushed Rice Krispies (I used to put the RK in the paper lunch bag and roll a rolling pin over it a few times). Then you put them on aluminuminuminum foil on a pan and cook at 350F for an hour. They come out very crispy. (The foil means you can throw away the stuck stuff.)
