Dinner: Miso Soup

For me miso soup is a nice simple not much work comfort food. Tonight I started off with soaking some shitake mushrooms in hot water. While that went on I thinly sliced half a large onion then browned it a bit with just enough olive oil to cover the bottom of the pan. The browning isn't standard, just something I tried. Strain the mushroom stock through a coffee filter using something like a pasta remover. Then add some torn up nori (dried seaweed sheets) and cut up some soft tofu. Add water as needed to make it a soup rather than a tofu stew. Then add miso paste and some salt to taste.
