Brownies

Well I was reminded of an important lesson today. When a recipe calls for leavening it is important to reduce the amount at our altitude. When I get home I'm going to have to remove brownie mess from the bottom of my oven. Fun. But what stayed in the pan is good.

Huh, I've never had any problems with my baking. Of course, I'm not sure how old my baking soda is...

This might have been an especially finely tuned recipe. Well next time I'll put in less than half the baking powder called for in the brownies.

Water also boils at a lower temp too. IIRC it's 1.5 degrees f for every five houndred feet. Makes a diff when roasting etc...

Because I cook meat and so on much more often than I bake this is firmly in my memory bank. Being at over 5,280 feet makes for some interesting differences.
