I think I would like them fresh smoked, but I don't think I shall buy them again in a tin. I had purchased the "Private Selection" Oysters the house brand for Kroger/King Soopers, while getting my usual kipper snacks which I do like They had a slightly bitter taste, and I didn't like the cottonseed oil they were preserved in either. It might have helped if they were in some slightly sweet oil. But in any case I suspect that oysters are better fresh as I usually have them.

Tinned or fresh? And do you have a favorite brand if you're using tinned ones?

I do smoked oysters (preferably the baby ones) on whim, and fairly often, but have found so much variation in all the common brands that I'd not commend any one in particular. They all seem to range from "edible" to "scrumptious" -- and I think it's them rather than my mood of the moment. Actually, some of the best (and worst) have come from the 99-cent stores -- but I've learned to avoid their clams and mussels, which are too often tasteless.

Good to know... Though it is disappointing that there isn't a consistently good brand. I wonder if there is a factor that I can easily tease out to find the good ones.
