Good chicken, okay stuffing. I bought parsley, dried apples, and raisins to approximate what I thought might be something that would be stuffed in a bird in the 15th century. The result is okay, it certainly flavored the meat in a nice way. Though eating the stuffing itself was not as great. I'm going to try a smaller experiment with the addition of some egg yokes to see if that helps or hurts the flavor. Though possibly I'll just put enough fruits in the turkey to give it a nice flavor and serve dried fruits separately. It's a thought.

Or I could just give up on the historical accuracy thing entirely and use bread like people from the 20th century. <grin>

Well, I don't know about historical accuracy, but nuts are good stuffed into a chicken. Walnuts, for instance.

I did use some walnut oil in the stuffing. Maybe I'll try walnuts next.

A friend once made some great stuffing using mainly fruit, but I don't remember what the original recipe was called. Possibly a fruit compote sort of thing from the Joy of Cooking. If I remember, I'll ask her tonight.

One of your commenters mentioned walnuts, and I can also point you to chestnuts. (And I'm truely sorry for having taken so long to get back to you on this, since I see you've since moved on to a whole turkey for company-consumption, go you!) I haven't tried them myself yet, but have had them in other things and they are not quite as airy as bread would be, but have a nice texture when fully cooked, and a flavor that marries happily with both sweet and savory. I'd be tempted to have a go at a stuffed bird myself, just to experiment with the stuffing and see if this worked.

Just try to find them pre-prepared (shelled, at a minimum), because these are really fussy to cook and clean yourself.
